Domaine Le Conte des Floris

The domaine Le Conte des Floris is a small exploitation created in 2000 of about 7 ha located between  Pezenas, Caux and Gabian. The winery is within the village of Caux in a old cellar from the beginning of the 20th century.
All our wines are worked without pesticid, insecticid or engrais. The harvest are handmade and the grappes are picked in small boxes of 12kg after selection within the wines. The wine is kept in small barrels during at least 15 months.
Through the expression of our « terroir » (divers and separeted) we are looking for fineand fresh wine rather than a powerfull and concentrated wine. The most of our work is to let the terroir to express itself with the least of technical intervention.
Each of red label is the expression of a singular terroir, for instance grenache for Villafranchien, syrah for schiste of Carbonifère and carignan for Basalte.
Our white wines are made essentialy with an unknown grappe variety called carignan blanc, alone for Lune Blanche, with marsanne and terret bourret for Arès Blanc, and with roussane for Lune Rousse. It's acidity is naturelly high which is allowed to pick it at a good maturity.
As a matter of fact, my first goal is to preserve the freshness and the right balance of my wines, and they are made to be drunk through a meal.
The field the Tale of Flowered is a small-scale farming created in 2000 including/understanding approximately 7 hectares of sparse vines in slopes of Languedoc between the communes of pézenas, Caux and gabian. The wine storehouse, or are made the wine making and the breeding, is in the vicinity immediate of the “circulade” which ensèrre the historical part of the village of Caux, in an old cellar of the beginning of the century.
All our vines are worked without use of pesticide, weedkiller or manure. The grape harvest is carried out in small cages of 12kg after sorts, if nécéssaire. Pressing is carried out with the hand on vertical press. The wine makings are done most naturally possible, with a very moderate use of suffers and indigenous yeasts. The breeding of the wines is done was of oak lasting at least a year and is generally prolonged ferments some for a greater harmony.
The essence of our work, while trying to be less the possible interventionist with the vine as with the wine storehouse, is to express with readiest our soils.
Of or vintages of red or the type of vine which expresses the mieu a particular soil is largely dominating: the grenache for the “Villafranchien”, the syrah for the schists of “Carboniferous” and the carignan for “Basalt”.
In white we work especially around an ignored type of vine although magnificiently adapted to our climate, the white carignan. Its natural acidity makes it possible to push rather high its maturity without to lead to soft wines. Dominating, to see even nearly exclusive, it gives the “White Moon”. In the most beautiful years, associated the roussane, it takes for name “the Russet-red Moon”. Finally when the marsanne takes it not and that the terret bourret supplements it, it gives the vintage “white Arès”.
Through the expression of our soils, diversified and thus very morcellés, we seek the smoothness and freshness in our wines more than the concentration and the power. The wine is made to be drunk with table, one will never say it enough…


Domaine Le Conte des Floris

Le domaine Le Conte des Floris est une petite exploitation créée en 2000 comprenant environ 7 hectares de vignes clairsemées en coteaux du Languedoc entre les communes de pézenas, Caux et gabian. Le chai, ou se font la vinification et l'élevage, se trouve à proximité immédiate de la “circulade” qui ensèrre la partie historique du village de Caux, dans une vieille cave du début du siècle.
Toutes nos vignes sont travaillées sans utilisation de pesticide, herbicide ou engrais. Les vendanges sont effectuées en cagettes, après trie sur pied si nécéssaire. Le pressage est réalisé à la main sur pressoir vertical. Les vinifications se font le plus naturellement possible, avec un usage très modéré du souffre et uniquement des levures indigènes. L'élevage des vins se fait en fût de chêne durant au moins un an et se prolonge généralement en cuve pour une plus grande harmonie.
L'essentiel de notre travail, en essayant d'être le moins interventionniste possible à la vigne comme au chai, est d'exprimer au plus prêt nos terroirs.
D'ou des cuvées de rouge ou le cépage qui exprime le mieux un terroir particulier est largement dominant : le grenache pour le “Villafranchien”, la syrah pour les schistes du “Carbonifère” et le carignan pour le “Basalte”.
En blanc nous travaillons surtout autour d'un cépage méconnu bien que magnifiquement adapté à notre climat, le carignan blanc. Son acidité naturelle permet de pousser assez haut sa maturité sans pour autant aboutir à des vins mous. Dominant, voir même quasi exclusif, il donne la “Lune Blanche”. Dans les plus belles années, associé à la roussane, il prend pour nom “Lune Rousse”. Enfin quand la marsanne prend la pas et que le terret bourret le complète, il donne la cuvée “Arès blanc”.
A travers l'expression de nos terroirs, diversifié et donc très morcellés, nous recherchons la finesse et la fraicheur dans nos vins plus que la concentration et la puissance. Le vin est fait pour être bu à table, on ne la dira jamais assez...
